밀, 옥수수 및 면실 가공 중 농약 잔류 특성 연구에 대한 고찰

요약

본 연구에서는 국제식품규격위원회(Codex Alimentarius Commission, Codex)의 농약 기준 설정을 위한 연구자료에서 밀, 옥수수 및 면실의 가공 중 총 61종 농약의 잔류량 변화에 대하여 고찰하였다. 밀 가공 중 38종 농약의 가공계수 (processing factor, PF)를 비교한 결과, white 밀가루로 가공한 후 33종 농약의 PF는 <0.07-0.39로 대부분 제거되었으며, 전립분으로 가공한 후 PF는 0.25-2.7로 white 밀가루에 2.5-18배 높은 경향을 나타내었다. 옥수수 가공 중 19종 농약의 PF를 비교한 결과, 가루로 가공한 후 cyantraniliprole, dicamba, prothioconazole, dichlorvos의 PF는 0.27-0.58이었다. 정제유로 가공할 때 cyantraniliprole 등 6종 농약의 PF는 <0.0058-<0.28로 72% 이상 농약이 제거되었다. 면실의 가공 중 34종 농약의 PF를 비교한 결과, 조유로 가공한 후 PF는 0.08-6.1, 정제유로 가공할 때 PF는 <0.0038-3이었으며, 탈산, 탈색, 탈취의 정제 과정을 거치면서 대부분의 농약들이 제거된 결과를 나타내었다. 결론적으로 밀, 옥수수 및 면실을 가루, 유지 등으로 가공한 후 잔류 농약은 상당량 감소되는 경향을 보였으나, 밀의 white 밀가루 및 전립분, 옥수수의 가루 및 정제유, 면실의 정제유 중 일부 농약은 소량 감소되거나 증가되는 결과를 나타내었다.

Abstract

Based on the pesticide standards of the Codex Alimentarius Commission (Codex), the processing factors (PFs) of 61 pesticides were investigated following processing of wheat, corn, and cottonseed. In case of wheat processing, 33 pesticides exhibited PFs of <0.07-0.39 in white flour and 0.25-2.7 (approximately 2.5-18 times higher) in whole meal flour. Of the 19 pesticides analyzed after corn processing, four pesticides (cyantraniliprole, dicamba, prothioconazole, and dichlorvos) exhibited PFs of 0.27-0.58 in corn flour. The PFs of six pesticides, including cyantraniliprole, were between <0.0058 and <0.28 after refined corn oil processing, indicating that ≥72% of the pesticides were removed. The PFs of 34 pesticides after cottonseed processing were 0.08-6.1 and <0.0038-3.0 in crude and refined oils, respectively. Most pesticides were removed during refining stages, such as alkali refining, bleaching, and deodorization. In conclusion, the amounts of residual pesticide were considerably low when flour, oils, and other products were produced after processing. In some cases, however, either only small amounts of pesticides were removed or the pesticides were concentrated after wheat, corn, and cottonseeds were processed for white and whole meal flour; flour and refined oil; and refined oil, respectively.

서 론

농작물 재배, 저장 및 운송 과정 중에 사용되는 농약은 식품 중 안전관리를 위하여 국제식품규격위원회(Codex Alimentarius Commission, Codex)와 우리나라 등 세계 각국 정부기관에서는 농약잔류허용기준(maximum residue limit, MRL)을 설정하고 있다(Chung 등, 2011; FAO, 2015; Lee과 Woo, 2010). MRL은 농약관리법에 따른 농약안전사용기준에 따라 살포한 농약이 식품을 통하여 평생동안 섭취하여도 안전한 수준으로 식품위생법에 따라 설정하고 있다(MFDS, 2020a; RDA, 2020). 그러나 농산물에 잔류된 농약은 식품의 조리 및 가공 중 대부분 감소되거나, 일부는 농축되어 원료보다 높게 잔류된다(Im 등, 2006; Im 등, 2007; Im과 Ji, 2016; Kim 등, 2009; Lee 등, 2009; Noh 등, 2012; Park 등, 2009). 즉, 농산물에 설정된 MRL은 농민이 농약관리법에 따라 올바르게 살포하였는지를 감시하는 용도이므로, 소비자들은 대부분의 경우 식품을 통하여 기준치만큼의 농약 성분을 섭취하지 않는다(Im과 Ji, 2016; Kim과 Im, 2019).

Codex의 농약 기준 설정을 위한 전문가 위원회(Joint meeting FAO/WHO on Pesticides Residues, JMPR)에서는 MRL 설정 시 식품을 통한 노출평가에 조리 및 가공 중 농약의 변화에 대한 가공계수를 활용하고 있다(FAO, 2009). 우리나라의 경우, 식품의 조리 및 가공 중 농약의 변화에 대한 연구 자료가 많이 생산되지 않아서 농약 기준설정 노출평가에 가공계수의 활용이 어려운 실정이다(MFDS, 2020b). JMPR에서는 Codex의 농약 기준 설정을 위하여 세계 각국에서 제출된 자료를 평가하면서 식품의 전처리, 조리 및 가공 과정 중 농약 성분이 감소 또는 증가되는 자료를 보고서 형태로 공개하고 있다. 1993년부터 공개된 JMPR 보고서에는 곡류, 콩류, 서류, 과일류, 유지 종실류, 채소류 등 다양한 식품의 조리 및 가공 중 농약 잔류량의 변화에 대한 연구 결과가 있다(JMPR, 2006c; JMPR, 2007a; JMPR, 2008a; JMPR, 2009a; JMPR, 2012d). 이 자료를 체계적이고 효율적으로 고찰할 경우, 우리나라에서 식품 중 노출평가의 기초 자료로 활용이 가능할 것이다. 본 연구에서는 Codex MRL 설정용 JMPR의 연구자료 중 밀, 옥수수, 면실에 대한 조리 및 가공 중 농약 잔류량의 변화, 농약 성분의 물리․화학적 특성에 따른 가공계수를 식품을 통한 잔류농약의 현실적인 노출평가에 활용될 수 있도록 하고자 한다.

재료 및 방법

농약 잔류량 변화 자료

JMPR EVALUATION 2002-2016년 자료 중 식품 가공 중 농약 잔류 특성에 관한 부분을 정리하였으며, 농약의 가공계수(processing factor, PF)는 식품가공 후 농약 잔류량을 원료 농산물의 농약 잔류량으로 나눈 값을 나타낸 것이다. 즉, 가공계수는 식품을 가공한 후 농약이 감소되거나 증가되는 비율을 나타낸 값이다.

자료 비교 및 분석 방법

Table 1은 식품별 농약 성분을 나타낸 표이다. 밀에 대한 aminopyralid 등 38종, 옥수수의 azoxystrobin 등 19종과 면실의 abamectin 등 34종 농약에 대하여 조사하였다.

Table 4는 밀, 옥수수 및 면실의 가공 중 농약 성분의 변화에 대한 관계를 농약의 물리․화학적 특성을 이용하여 비교 설명하기 위하여 전 세계 농약 성분에 대한 특성을 정리한 Pesticide Manual을 통하여 농약의 수용성과 지용성의 특성을 나타내는 옥탄올과 물 분배계수(Log Kow), 농약의 휘발성의 지표인 증기압(vapor pressure), 농약이 식물 체내에 침투하는지, 표면에 잔류되는지 여부를 판단하는 침투성(systemic) 및 비침투성(non-systemic)의 작용 특성(route of action)을 조사하였다(Turner, 2015).

Table 2는 JMPR에 각 농약회사들이 밀, 옥수수, 면실에 농약이 등록된 국가에서 각 가공공정 중 농약 잔류량 변화 연구결과를 제출한 자료 중 58종 농약 성분별로 밀, 옥수수 및 면실의 원료와 가공 과정 중 농약 분석법 81건에 대하여 분석 시 사용된 추출 용매와 분석기기에 대하여 정리하였다.

Abamectin, acetochlor, aminopyralid 등 32종의 농약은 잔류농약 분석 시 liquid chromatography-tandem mass spectrometry (LC-MS/MS)를 이용하여 분석하였으며, thiamethoxam과 emamectin benzoate는 high performance liquid chromatography UV detector(HPLC-UVD)와 high performance liquid chromatography fluorescence detector(HPLC-FLD)를 사용하여 분석하였다. Boscalid와 fluzifop-P-butyl 등 6종의 농약은 gas chromatography-mass spectrometry(GC-MS)를 이용하여 분석하였다. Flusilazole 및 imazethapyr는 gas chromatography nitrogen phosphorus detector(GC-NPD), dichlorvos, ethephon 및 glufosinate는 gas chromatography flame photometric detector(GC-FPD), acetamiprid, bifenthrin 및 cyfluthrin 등 12종 농약은 gas chromatography electron capture detector(GC-ECD)를 사용하여 분석하였다. Imazamox 농약은 capillary electrophoresis UV detector(CE-UVD)를 이용하여 분석하였다.

시료 전처리를 위한 추출 용매의 경우 전체 58종 농약 중 20종은 acetonitrile과 water를 혼합한 용매를 이용하였으며, 이외의 농약들은 methanol, acetone, n-hexane 등의 유기용매를 사용하였다. Dicamba는 시료 추출 시 HCl을 사용하여 전처리 과정에서 분해되는 것을 방지하였으며, 이 농약은 Kow 값이 1.87로 수용성에 가까운 농약이다(Lee 등, 2013; Turner, 2015).

최근 잔류농약 분석은 LC-MS/MS와 GC-MS/MS를 사용하는 빈도가 높은 편이다. GC와 HPLC 분석에서는 극미량을 분석하기 위하여 수십 그람의 식품 시료를 취한 후 용매로 추출 시 matrices의 불순물 제거와 농약 성분의 농축을 위하여 번거로운 정제과정을 거쳐야 되지만, MS/MS는 상대적으로 감도가 우수하므로 QuEChERS 전처리 방법과 같은 단순한 처리로도 극미량 분석이 용이하다(Cho 등, 2019; Kong 등, 2016, Li 등, 2015; Yang 등, 2013). 본 연구의 조사 결과, LC-MS/MS 분석 45건, HPLC 3건, GC-MS 6건, GC로 26건, CE-UV로 1건 분석된 것으로 조사되었으며, 이 중 LC-MS/MS로 분석한 비율은 81건 중 45건으로 55.6%를 차지하였다.

가공 방법

Table 3은 JMPR의 밀, 옥수수 및 면실을 식품으로 가공하면서 잔류농약 변화에 대한 연구를 수행한 각 농약별 가공 방법에 대하여 정리하였다. 밀은 밀가루(white flour), 전립분(whole meal flour)과 빵, 사료로 이용되는 부산물인 bran, germ, shorts에 대하여 조사하였다. 옥수수의 경우에는 옥수수 가루, 조유(crude oil) 및 정제유(refined oil), 전분, bran, germ, grits, 면실은 조유 및 정제유, meals와 hulls 등의 가공 방법에 대하여 조사하였다.

밀의 일반적인 가공공정은 건조, 선별, 조질, 조쇄, 사별, 분쇄, 숙성으로 구분된다(Noh 등, 2015). 수확된 밀알을 수분이 10-13%가 되도록 43-57°C에서 건조하고, 가벼운 불순물을 제거하기 위하여 aspiration 한다. 체(sieve)를 이용하여 먼지나 흙 같은 이물질을 제거한다. 그 다음은 조질 공정으로 수분 함량을 15-17.5%로 증가시켜서 껍질과 배유가 잘 분리되도록 가수하는 tempering과 수분평형에 도달시키기 위하여 24-48시간(실온) 동안 방치하는 conditioning으로 구성된다. 제분공정은 밀가루와 밀기울을 분리하는 공정으로 배유 부위와 겨층 부위를 거칠게 빻는 조쇄공정을 거친 후 체로 걸러 입자의 크기에 따라 분별하여 bran, germ, break flour가 생산된다. 이 가루를 체를 이용하여 입자 크기에 따라서 분리하고, 입자가 큰 가루는 다시 분쇄하여 white flour를 생산한 후 숙성과정을 거친다. 전립분은 부산물을 분리하지 않고 전체를 제분한 밀가루이다(JMPR, 2008a; JMPR, 2016b). 빵의 일반적인 가공방법은 밀가루에 설탕, 소금, 지방질, 효모, 물 등을 배합하여 반죽을 한 후 27-32°C에서 30분간 1차 발효를 한다. 그 후 반죽을 분할, 성형하여 30-32°C에서 30-65분간 2차 발효를 진행한 뒤 207-230°C에서 50-60분간 굽는다(JMPR, 2007b; JMPR, 2008e; JMPR, 2009a; JMPR, 2016b; JMPR, 2016g; Noh 등, 2015).

옥수수는 수확 후 수분함량이 10-13%가 되도록 건조하고, 이물질을 제거하기 위하여 aspiration 한다. 옥수수 flour 가공을 위하여 dry milling 방법을 사용하는데, 수분이 21% 되도록 condition, 분쇄한 후 열풍으로 건조한 다음 체를 이용하여 bran, germ, grits를 flour와 분리한다. 옥수수 전분과 글루텐은 wet milling 방법으로 가공되는데, 옥수수 알곡을 0.1-0.2% 황산 용액에 49-54°C에서 1-2일간 침지한 다음, disc mill로 분쇄한 후 원심분리하여 germ과 hull을 분리한다. Germ과 hull을 분리한 액을 스크린하여 상층에 있는 부분은 버린 후 이 액을 원심분리하여 전분과 글루텐으로 분리하고 세척한다. 전분은 수분 15% 이하로 건조하고, 글루텐은 12% 이하로 건조한다. 조유 가공 방법은 germ을 가열, 조분쇄 한 후 n-hexane으로 추출하고 n-hexane을 제거하여 가공하는 방법과 가열, 압착하여 가공하는 두 가지 방법이 있다. 조유를 탈산, 탈색, 탈취의 정제공정을 거쳐서 정제유로 가공된다(JMPR, 2010e; JMPR, 2012d; JMPR, 2012h; JMPR, 2016e).

면실은 불순물을 제거한 다음 껍질과 표면의 섬유질을 제거한다. 그 다음 분쇄한 후 n-hexane으로 유지를 추출하거나 가열, 압착하여 조유를 생산한다. 조유를 탈검, 탈산, 탈색, 탈취 공정을 거친 후 정제유로 가공한다(JMPR, 2008b; JMPR, 2014a; JMPR, 2015d; JMPR, 2016d).

농약의 특성

밀, 옥수수와 면실에 대하여 가공 과정 중 농약의 가공계수 연구가 수행된 61 성분에 대한 특성을 Table 4에 나타내었다. 농약의 특성 증 증기압(vapor pressure)은 수치가 소수점 이하로 내려갈수록 비휘발성이며, 정수로 증가할 수로 휘발성의 특성을 나타낸다. Azoxystrobin의 경우 증기압이 1.1×10-7(20°C)로 비휘발성이며, dichlorvos는 2,100(25°C)로 휘발성 농약이다. Kow는 수치가 3.5 이상이면 지용성 농약으로 분류하고, 수치가 증가할수록 지용성의 특성이 강한 농약이다. 수치가 3.5보다 작을수록 수용성 특성을 나타낸다(Kim 등, 2020; Turner, 2015). Cyhalothrin은 Kow가 6.9로 지용성 농약이나, glyphosate는 <-3.2(pH 5-9)로 수용성 농약이다. 농약의 systemic(침투성) 또는 non-systemic(비침투성) 특성은 작물에 농약 살포 후 작물체내로 침투하는지, 표면에 잔류되는지 여부에 대한 특성을 나타낸다. Abamectin과 acetamiprid 등 33종은 침투성 농약이지만, bifenazate와 chlorpyrifos-methyl 등 13종은 비침투성 농약이다. 이들 농약의 특성은 식품 가공 중 농약의 감소에 많은 영향을 주는 인자들이다. 이러한 농약의 특성을 활용하여 식품 가공 중 농약의 가공계수와 비교 분석하였다.

밀 가공 중 잔류농약 변화

밀 가공 중 농약에 대한 가공방법별 농약의 PF를 조사한 결과는 Table 5와 같다. 밀기울을 제거 등의 제분 공정을 거친 전체 38종 농약에 대한 white 밀가루의 PF는 <0.07-1.2였으며, 15종 농약에 대한 전립분의 PF는 0.25-2.7로 조사되었다. White 밀가루로 제조한 빵의 12종 농약 PF는 0.02-<0.91, 전립분으로 제조한 빵의 16종 농약 PF는 0.12-0.82이었다. 사료로 이용되는 bran은 대부분 밀의 껍질로 구성되어 있어서 PF가 0.29-4.5로 식품으로 이용되는 부분보다 농약이 농축되는 경향이었으며, germ은 0.19-3.2로 bran의 PF보다 낮은 경향이지만 식품보다는 잔류량이 높은 경향을 보였다. 이 결과는 살포된 농약 성분은 대부분 표면에 잔류되기 때문에 bran과 germ의 가공계수가 밀가루보다 높은 경향으로 나타났다.

White 밀가루의 PF 중 imazomox가 1.2로 농약 성분이 소량 농축되었으며, quinclorac은 0.66, MCPA 0.48, flupyradifurone 0.445, trinexapac-ethyl 0.43로 제분 후의 농약 감소율이 34-57%를 나타내었다. 이 농약들은 침투성으로 밀알 내부에 농약이 잔류되어 있어서 제분 후에도 농약의 제거율이 낮은 결과를 보였다.

이외 33종 농약의 white 밀가루 PF는 0.39-<0.07로 61-93%의 농약이 제거되는 것으로 조사되어 밀알의 밀기울과 표면 근처에 잔류된 농약이 대부분이 제거된 것으로 판단된다. 이 결과는 알벼(나락)를 현미와 백미로 도정한 후 상당량의 농약이 제거되었다는 연구와 유사한 경향이었다(Kong 등, 2012). 농약이 60% 이상 제거되는 26 성분 중 aminopyralid 등 11종의 침투이행성 특성을 가진 농약이 포함되어 있으나, 이 성분들도 상당량이 표면 근처에 잔류되기 때문에 제분 공정 중 상당량이 제거된 것으로 판단된다.

전립분의 경우에는 azoxystrobin을 제외한 14종 농약들의 PF가 white 밀가루보다 2.5-18배 높은 경향을 나타내고 있다. Azoxystrobin의 white 밀가루는 low grade flour로 밀알 표면 근처에 성분이 상당량 포함된 것이므로 전립 밀가루와 동일한 PF를 나타낸 것으로 판단된다.

Park 등(2009)에 따르면 밀 중 azinphos-methyl, chlorpyrifos-methyl, chlorpyrifos, trichlorfon, fenitrothion, malathion의 제분 공정 후 white 밀가루의 PF는 0.05-0.07이며, bran의 PF는 1.40-1.58. 또한 Uygun 등(2005)에서 밀을 white 밀가루로 가공할 때 malathion과 fenitrithion의 PF는 0.07, 0.10으로 농약이 각각 93%, 90% 감소되었으며, bran의 PF는 1.11, 1.4이었다. 본 연구에서 조사한 bran의 PF가 white 밀가루에 비해 높은 결과와 경향이 유사하였다. 그러므로 제분 공정 중 밀가루에는 대부분의 농약 성분이 제거되나, 밀 껍질이 다량 함유된 사료에는 농약이 농축되는 것으로 판단된다.

White 밀가루에서 빵으로 제조한 후 증기압이 낮은 비휘발성 농약들의 PF 변화를 살펴보면, azoxystrobin이 0.25에서 0.13, bifenthrin은 0.31에서 0.245, deltamethrin은 0.31에서 0.14, flupyradifuron은 0.445에서 0.32, fluxapyroxad는 0.16에서 0.12로 각각 48, 21, 54.8, 28.1 및 25%의 농약이 감소되었다. 그러나 증기압이 높은 휘발성 농약들의 PF를 보면, chlorpyrifos-methyl은 0.23에서 0.08, fenitrothion은 0.235에서 0.1, malathion은 0.087에서 0.02로 나타나, 각각 65.2, 57.4 및 77%로 감소되었다. 이 결과는 휘발성이 높은 농약들이 빵 제조과정 중 오븐의 열에 의해서 분해된 것으로 판단되었다. Sharma 등(2005)에 따르면 빵으로 가공 후 endosulfan 등 4종 농약은 47-89% 감소되었으며, Uygun 등(2009)에서 밀을 쿠키로 가공 후 malathion 및 chlorpyrifos-methyl은 각각 97%, 92% 감소되어 본 연구에서 조사한 빵 가공 후 농약의 감소 경향과 유사한 것으로 나타났다.

또한 bixafen, flusilazole, surfoxaflor 및 thiamethoxam은 밀가루에서 빵으로 가공 전․후 동일한 PF인 <0.37, <0.91, <0.2와 <0.7로 조사되었는데, 이 결과는 밀가루와 빵 제조 후의 잔류량이 정량한계 수준의 동일한 수치이기 때문이다. 전립분에서 빵으로 제조한 후 benzovindiflupyr, bifenthrin, bixafen, boscalid, flupyradifuron, fluxapyroxad, isopyrazam, picoxystrobin 및 pinoxaden의 감소율은 53.7-98%로 조사되었으나, chlorpyrifos-methyl, malathion 및 metrafenon은 각각 16, 48 및 48.2%로 나타났다. 이 결과들은 열처리에 의한 농약 감소율은 증기압의 특성에 따라서 benzovindiflupyr 등 8종은 휘발성이 약하고, chlorpyrifos-methyl 등 3종은 휘발성이 강한 성질에 따른 결과로 판단된다. Uygun 등(2005)에서 white 밀가루를 빵으로 가공할 때 malathion의 PF는 0.07에서 0.01, fenitrithion의 PF는 0.10에서 0.01으로 농약이 각각 81.4%, 88% 감소되었다. 이러한 결과는 본 연구에서 고찰한 밀의 빵 제조 후 열에 의한 농약 감소율 경향과 유사한 것으로 나타났다.

옥수수 가공 중 잔류농약 변화

Table 6은 옥수수에 대한 19종 농약의 옥수수 가루, 조유, 정제유, 전분, grits, germ과 bran으로 가공 중 농약 가공계수 자료를 정리하였다. 옥수수 가루는 dry milling 가공 중 분쇄 후 체로 스크린하여 grits, germ, bran과 함께 생산된다. PF는 cyantraniliprole이 0.27, dicamba 0.28, prothioconazole 0.57, dichlorvos가 0.58로 농약이 42% 이상 제거되었지만, 이외 azoxystrobin 등 15종 농약에서는 소량 제거되거나 일부 농축되었다. 이 결과는 옥수수 가루 제조과정 중 체를 이용한 스크린에 의하여 농약 성분이 다량 존재하는 표면부분이 일부만 제거되거나 농약 성분은 거의 제거되지 않는 것으로 판단된다.

옥수수 정제유 가공 과정 중 총 12종 농약의 wet milling과 dry milling의 PF를 비교한 결과, azoxystrobin은 6.1, 0.64, boscalid 6.0, <1, bifenthrin 2.3, 0.77, cyantraniliprole 0.33, <0.22, flubendiamide 0.45, 0.12, fluopyram 0.58, <0.36, fluxapyroxad 4.1, 0.4, penthiopyrad 2.7, 2.3, picoxystrobin 6.9, 6.6으로 나타났으나, deltamethrin은 1.3, 18, propiconazole <0.8, 1.6, teflubenzuron 1.0, 1.5로 조사되었다. Deltamethrin 등 3종을 제외한 azoxystrobin 등 9종 농약에서는 wet milling이 dry milling보다 PF가 높은 경향을 보였다. Wet milling은 옥수수를 황산 용액에 침지한 후 germ과 전분으로 분리한 후 유지를 추출하고, dry milling은 분쇄하여 germ과 가루를 분리한 후 유지를 추출하는 차이가 있다. Wet milling으로 가공한 경우가 dry milling 방법보다 유지 추출 효과가 우수하므로 농약 성분들도 다량 추출되는 것으로 판단된다.

정제유 가공연구가 수행된 총 17종 농약 중 wet milling의 PF를 살펴보면, cyantraniliprole은 <0.22, dicamba는 <0.0058, dichlorvos는 0.14 및 glyphosate는 <0.2, prothioconazole <0.28로 조사되었다. 이 농약들은 수용성 특성을 가지고 있으므로 정제 후 유지로 이동되지 않아서 72% 이상이 제거된 것으로 판단된다. 그러나 이외 azoxystrobin 등 12종 농약은 정제 후 농약 성분이 농축되거나 64% 이상 잔류되었다. 이 성분들은 대부분 지용성 특성을 가지고 있으므로 정제 후에도 농약이 농축되거나 상당량 잔류되었다. Flubendiamide는 Kow가 4.2인 지용성 농약임에도 불구하고 dry milling 가공한 후 정제한 유지의 PF는 0.12로 특성이 반영되지 않는 결과를 보였다. Van Duijn(2008)에 의하면 해바라기 오일에서 dichlorvos는 수용성 농약으로 정제 과정 중 탈색 과정에 의하여 대부분 제거되었으며, fenitrothion의 경우 Kow값이 3.43으로 지용성 농약이지만 탈취 과정에 의하여 제거되어 정량한계 이하(<0.01)로 검출되었다. 이 연구결과는 본 연구에서 고찰한 옥수수 조유 정제 공정에 의하여 농약이 제거되는 경향이 유사한 경향이었다.

옥수수 전분 가공 연구가 수행된 총 14종 농약 중 11종은 50% 이상의 농약이 제거되었다. 나머지 3종 중 boscalid는 원료와 전분 가공 후 정량한계 수준으로 PF는 1, flupyradifurone과 propiconazole은 전분 가공 후 정량한계 수준으로 PF는 각각 <0.89, <0.81로 실제 농약 성분은 대부분 제거된 결과이다.

면실 가공 중 잔류농약 변화

Table 7은 면실에 대한 34종 농약의 조유, 정제유, meal, hull 가공 중 가공계수 결과이다. 11종 농약에 대하여 조유를 정제유로 정제한 후 PF를 비교한 결과, cyfluthrin의 조유 1.9, 정제유는 1.2, fenpropathrin은 조유 2.3, 정제유 3, fluazifop-p-butyl은 조유 1.6, 정제유 1.0으로 조사되었다. 이 3종 농약은 탈산, 탈색, 탈취 과정의 정제 과정 이후에도 농약이 거의 제거되지 않거나 농축되어서 Kow값이 3.5 이상인 지용성 농약을 특성을 반영한 것으로 판단된다. Boscalid, flupyradifurone과 pyraclosrobin은 조유와 정제유에서 농약이 정량한계 수준이 검출되거나 검출되지 않았으며, cyantraniliprole, cyhalothrin, dichlorvos, flubendiamide와 profenofos는 정제유로 가공한 다음 농약이 80% 이상 제거되었다. 그러나 flubendiamide의 경우에는 조유 가공 후 PF가 6.1로 농축되었으나, 정제유로 가공한 다음 0.7로 88% 이상의 농약이 제거되었지만, 최종 정제유에는 원료 중 농약의 70%가 잔류되어 지용성 농약의 특성을 나타내었다.

유채씨에 대한 가공계수 연구에서 cypermethrin의 조유에서의 PF는 1.6, 정제유 1.2로 나타나 농축되는 결과를 나타내었으며, 해바라기씨에 대한 가공계수 연구에서는 cyfluthrin 농약의 조유 가공 후 PF는 2.3, 정제유 1.1로 농축되는 결과를 나타내었다(JMPR, 2008d; JMPR, 2012a). 두 농약 모두 지용성 농약으로 면실 중 flubendiamide의 유지 정제 후 농약의 잔류량이 높은 결과와 유사한 경향을 나타냈다.

정제유에 대해서만 PF가 산출된 23종 농약에 대한 결과를 비교한 결과, abamectin 등 21종은 약 87% 이상 농약이 제거되었다. Sodium hydroxide를 처리하는 탈산, 활성탄을 이용한 탈색, 고열의 증기를 이용한 탈취과정을 거친 후에는 지용성 또는 수용성 구분 없이 대부분의 농약들이 제거되었다. 그러나 지용성 특성인 emamectin benzoate는 PF가 0.38, 수용성 특성인 flonicamid는 0.32의 결과를 보였다. Emamectin benzoate의 면실 원료에 0.015 mg/kg, 정제 후 0.0058 mg/kg 미량 잔류하였으며, flonicamid는 원료에서 0.025-0.071 mg/kg, 정제한 유지에 <0.02로 불검출되었다. 정제유 중 PF 값이 높은 이유는 미량 검출값과 정량한계 값에 원료 잔류값을 나눈 결과가 비교적 높은 PF 값을 나타내었기 때문이다(JMPR, 2015e). 실제로 정제 후 유지 중의 농약은 대부분 제거되는 결과를 보였다.

Lee와 Shin(1996)에 의하면 쌀겨에서는 cypermethrin, diazinon, dichlofuanid가 0.01-0.122 mg/kg 검출되었고, 미강 원유에서는 cypermethrin, diazinon, dimethoate, dichlofluanid, etrimfos, flucythrinate이 0.015-0.654 mg/kg 검출되었으며, 탈검, 탈산, 탈색, 탈취, 탈납 공정을 거친 후 최종 정제유에서는 농약이 전부 제거되었다고 보고하였다. 쌀겨에 잔류된 농약은 조유로 가공한 후 농약이 농축되었으며, 원유를 탈색과정 중 활성탄에 의한 흡착과 탈취 공정 중 고온에 의한 열분해로 인하여 농약이 분해 및 소실되는 것으로 보고되었다. 이 결과는 면실 정제유 가공 후 농약 잔류량 변화를 조사한 본 연구 결과와 유사한 경향을 나타내었다.

결론적으로 본 연구에서 조사된 가공계수는 식품 가공 중 잔류농약이 감소되거나 증가되는 양상을 나타내는 요소이므로, 식품 중 잔류농약의 현실적인 노출을 반영할 수 있다. 이 자료들은 우리나라에 수입되거나 생산되어 유통이 되는 식품 중 잔류농약의 위해평가에 활용 가능할 것이다.
