In response to the rapid advancement of artificial intelligence and data-driven technologies in food science, this special topic aims to explore their innovative applications for understanding, evaluating, and improving complex food systems. We invite original research articles and reviews that present cutting-edge research on AI-based prediction, database construction, non-destructive analysis, digital monitoring, process optimization, quality and safety evaluation, shelf-life assessment, and functional property analysis in food science and preservation.

Scope and Topics

We invite submissions on a wide range of topics related to AI and data science in foods. Key topics include, but are not limited to:

• AI-based prediction and monitoring of food quality, shelf-life, and storage stability
• Machine learning and deep learning applications in food science
• Non-destructive analysis of food composition, safety, and physicochemical properties using spectroscopy, imaging, and sensor data
• Data-driven evaluation of functional components, bioactive compounds, and biological properties of food-derived substances
• Database development, digital monitoring, and decision-support systems for food science and food industry applications

Submission Guidelines

Manuscripts should be submitted online via the journal's submission system, indicating that they are intended for the Special Topic on “Data-Driven and Intelligent Approaches in Food Science." All submissions will undergo a peer-review process.
