Table 4. Significance differences in the vitamin K contents of conger eel depending on harvest season
Vitamin K contents (μg/100 g) | Size1) | Harvest period2) |
11 months (Jan-Nov) | t-value4) | 12 months (Jan-Dec) | t-value |
Phylloquinone | Large | 0.44±0.03 | 5.293*** | 0.46±0.15 | 0.715 |
Small | 0.27±0.02 | | 0.41±0.49

Total vitamin K3) | Large | 1.01±0.05 | 6.583*** | 1.03±0.20 | 2.784** |
Small | 0.63±0.03 | | 0.77±0.57
Large conger eel: 80±5 cm, small conger eel: 50±5 cm.
The significance of vitamin K contents in conger eel was analyzed in two ways, excluding (11 months from Jan to Nov) and including (12 months from Jan to Dec) samples with a particularly high content observed in December.
Total vitamin K = Phylloquinone + Menaquinone.
